Recent studies indicate that cool climate and high altitude regions of Southern Brazil have a special aptitude for the production of white wines. The objective of this study was to carry out a chemical and sensory characterization of white wines from different varieties with potential for cultivation. The experiment was conducted in 2015 vintage, the grapes were produced at Epagri Experimental Station, located in São Joaquim, Santa Catarina State (28°17?39?S; 49°55?56?W, altitude 1,415m a.s.l.), the micro-scale vinifications were held at Santa Catarina State University Experimental Winery. The evaluated white varieties Pinot Grigio, Riesling Renano, Viognier, Greco di Tufo, Garganega and Manzoni Bianco were compared with the main varieties grown in the region, Chardonnay and Sauvignon Blanc. The wines were analyzed for titratable acidity, pH, total polyphenol and color intensity. Then the wines were tasted and classified using quantitative/descriptive sheet. Chemical and sensory data were analyzed using descriptive statistics and principal component analysis. The lowest values of titratable acidity and higher pH values were observed in wines of Viognier and Pinot Grigio. The higher color intensity and higher total polyphenol content was observed in Garganega and Greco di Tufo. According to the sensory attributes, the wines that stood out were Manzoni Bianco, Greco di Tufo, Sauvignon Blanc and Viognier. |
